Ingredients:
1 tbsp olive oil
6 cloves garlic (minced)
2 large onions (peeled and cut into wedges)
12 sweet Italian sausage (pricked with a fork)
2 red bell peppers (seeded and chopped)
1.5 lbs. baby potatoes (halved)
1 tsp dried rosemary
1 tsp dried basil
1 tsp dried thyme
3/4 c dry white wine
1 tsp salt
1/2 tsp fresh ground black pepper
Directions:
1. Prepare the oven and preheat to 218 degrees C or 425 degrees F.
2. In a large resealable bag, add all the ingredients aside from the wine and sausage. Seal and shake the bag until all the ingredients are well blended.
3. Empty the bag into a large roasting dish and spread the veggies evenly.
4. In the same bag, add the sausage, herbs, and olive oil. Shake the bag again until everything is well combined.
5. Arrange the sausages over the veggies.
6. Place the roasting pan inside the preheated oven and roast the veggies and sausages for about 30 minutes or until done.
7. Remove the pan from the oven and toss everything until well combined.
8. Pour the wine into the pan, then put it back inside the oven. Bake for another 20 minutes or until the potatoes are fork-tender.
9. Remove from the oven and let them rest for a few minutes at room temperature.
10. Serve and enjoy!
