Ingredients:
1 tbsp olive oil
3 medium potatoes russet
1 large onion, peeled and chopped
1 pound of smoked turkey sausage, cut into rounds
1 tsp sweet paprika
1/2 tsp fine sea salt
1/2 tsp freshly ground black pepper
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Line with tin foil a large baking sheet.
3. Apply cooking spray onto the prepared baking sheet.
4. Slice the sausage into circles.
5. Dice the tomatoes and onions to even pieces.
6. In a large mixing bowl, add the potatoes, onions, and sausage slices.
7. Add 1 tbsp of olive oil, paprika, salt, and pepper. Toss everything until well mixed.
8. Transfer the mixture onto the prepared baking sheet and spread it evenly.
9. Place the baking sheet inside the preheated oven and roast mixed ingredients for about 45 minutes or until the potatoes are fork-tender and golden brown. Make sure to stir every 15 minutes.
10. Remove from the oven and allow it to rest for a few minutes at room temperature.
11. Serve warm and enjoy!
