Oven Roasted Sweet Potatoes

Prep Time: 20 mins | Cook Time: 1 hr 10 mins | Total Time: 1 hr 30 mins | Yield: 8 Servings

I love these heavenly treats so much! Oh, man, you are so in for a treat! Have a wonderful day, friends. Enjoy!

Ingredients:

3 lbs sweet potatoes
2 tbsp olive oil
1 tsp kosher salt
¼ tsp garlic powder
¼ tsp black pepper
1 tsp chopped thyme

Directions:

Step 1: Line with aluminium foil on a large baking sheet.

Step 2: Apply olive oil all over the foil. This will prevent potatoes from sticking to one another.

Step 3: Peel the washed potatoes. Make sure to trim the ends and slice them into about 3/4-inches thick circles.

Step 4: In a large mixing bowl, add the sliced sweet potatoes and drizzle olive oil on top. Make sure to coat each completely with the oil.

Step 5: Add garlic powder, salt, and black pepper. Stir until well mixed.

Step 6: Arrange the potatoes onto the prepared baking sheet. Cover the baking sheet with aluminium foil.

Step 7: Place the oven rack in the middle.

Step 8: Place the potatoes inside the oven and roast the potatoes for 30 minutes at 425 degrees F.

Step 9: Remove the potatoes from the oven and remove the cover.

Step 10: Put the baking sheet back into the oven and roast for another 20 minutes or until golden brown.

Step 11: Turn the potatoes over and roast them for another 10 minutes or until done.

Step 12: Remove the potatoes from the oven and allow them to cool at room temperature for at least 10 minutes.

Step 13: Transfer the Roasted Sweet Potatoes onto a clean serving plate.

Step 14: Sprinkle freshly chopped thyme on top.

Step 15: Serve and enjoy!
