Ingredients:
For the veggies:
4 cloves garlic, minced
1 yellow onion, diced
1/2 teaspoon salt
6 c packed fresh spinach
13.5 ounces can artichokes, liquid drained and chopped
6 tablespoons Unsalted Butter, divided
2 tablespoons fresh dill or chives (plus more for garnish)
6 English Muffins, cubed
1 red bell pepper, diced
For the eggs:
2 c white cheddar cheese, shredded
1/2 teaspoon pepper
12 eggs
2 c milk
Directions:
Add 2 tablespoons of butter to a 9×13-inch baking dish and spread it evenly.
Place the English muffins into the baking dish over the butter.
Add another 2 tablespoons of butter on top of the English muffins and spread it evenly. Make sure to cover them well.
Place a large sauté pan on the stove and turn the heat to medium. Add 2 tablespoons of butter and allow it to melt.
Add the onion and bell pepper, then sauté for a few minutes until translucent and soft. Sprinkle salt and pepper to taste.
Add the garlic and sauté for about a minute just until aromatic. Stir in the spinach and cook until wilted.
Remove the skillet from the heat, then add the chopped artichokes and fresh dill. Stir until well combined.
Transfer the contents of the skillet over the English muffins in the baking dish and spread them evenly.
Add cracked eggs, salt, milk, and pepper into a large mixing bowl. Whisk until well incorporated. Add the egg mixture on top of the veggies to the baking dish. Cover it with plastic and place it in the fridge to chill for at least 2 hours.
Prepare the oven and preheat it to 190 degrees C or 375 degrees F.
Place the baking dish in the preheated oven and bake for about 40 to 45 minutes. Make sure to remove the plastic wrap.
Remove from the oven, then sprinkle freshly chopped chives and cheese on top to garnish.
