These potato boats are amazing to serve by themselves. But they are also great dipped in some ranch. Ranch and potatoes are my favorite combo!
Jump-start your mornings with these delicious potatoes, egg boats. Or serve them for brunch to impress your guests.
INGREDIENTS
1 tbsp garlic oil
8-10 large potatoes
1 bell pepper, diced (not green if need low FODMAP)
8 large eggs
1/4 c. chopped green onion, about 1 bunch
9 ounces Paleo breakfast sausage
1/2 tsp salt
HOW TO MAKE PALEO WHOLE30 POTATO EGG BOATS
Step 1: Prepare the oven. Preheat it to 375 degrees. Using parchment paper, line a sheet tray.
Step 2: After washing the potatoes, pork them a few times using a fork. Coat the potatoes with a bit of avocado oil before placing them on the prepared sheet tray. Place in the preheated oven and bake for about 50 to 60 minutes. Remove from the oven when done and allow the potatoes to cool for 10 to 15 minutes.
Step 3: Once cool enough to handle, cut the top off of the potato. Then, scoop out the inside, leaving only a bit of potato lining the skin. Then, place it in a 13 x 9-inch pan.
Step 4: To make the filling, heat the garlic oil in a large skillet over medium heat. Add the pepper, green onion, and salt and cook for 5 to 7 minutes until tender. Next, add the sausage and continue to cook for 5 minutes more.
Step 5: Into a large bowl, crack the eggs and scramble. Add this to the pepper and sausage mixture.
Step 6: Evenly divide the filling between the potatoes and bake for about 40 minutes until the eggs are set.
