Incredibly easy and super quick! This pan-seared cod in a simple yet delightful White Wine Tomato Basil Sauce is the best fish dinner you can make for your family!
Ingredients
White Wine Tomato Basil Sauce:
3 large cloves garlic, finely minced
2 tbsp olive oil
1/4 tsp crushed red pepper flakes
1-pint cherry tomatoes, sliced in half
2 tbsp fresh lemon juice
1/2 tsp fresh lemon zest
1/4 c. dry white wine
1/2 c. fresh basil, finely chopped
1 tsp granulated sugar
1/2 tsp salt (more to taste)
1/4 tsp fresh ground black pepper (more to taste)
Cod:
1 and 1/2 lbs. fresh cod, cut into 4 fillets (or four 6 oz. fillets)
Salt and pepper
2 tbsp olive oil
How to make Pan-Seared Cod in White Wine Tomato Basil Sauce
White Wine Tomato Basil Sauce:
Step 1: In a large saute pan, heat the oil over medium heat. Once hot, add the crushed red pepper flakes and garlic. Cook for about a minute, stirring until aromatic.
Step 2: Toss in the cherry tomatoes and continue to cook until tender and blistering, stirring occasionally. Make sure that the tomatoes still hold their shape. This takes about 9 to 12 minutes.
Step 3: Pour in the white wine. Stir and let it simmer. Then, whisk in the basil, lemon juice, lemon zest, salt, sugar, and pepper. Cook for additional 2 minutes.
Step 4: Into a bowl, transfer the sauce and set aside until needed.
Cod:
Step 5: In a large saute pan, heat the oil on medium heat. Using paper towels, pat the cod dry and season all sides with salt and pepper.
Step 6: In the hot oil, place the cod and sear for about 3 minutes until golden brown. Gently flip and cook for another 3 to 4 minutes or until the cod is completely cooked.
Step 7: Over the cod, pour the white wine, and tomato basil sauce and allow the sauce to warm for a minute before taking off the heat.
Step 8: Serve immediately. Enjoy!
