Ingredients:
1/3 c grated Parmesan cheese
2 pounds red potatoes – washed
1 stick butter – 1/2 c
3 tbsp herb seasoning – divided (any brand – I use Mrs Dash)
nonstick cooking spray
1 tsp salt
1/2 tsp black pepper
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Put 1 stick of the butter into a 9×13-inch baking pan.
3. Place the pan inside the preheating oven and allow it to melt.
4. Remove from the oven and let the pan rest at room temperature.
5. Slice each potato into two.
6. Add 2 tbsp of the herb seasoning, salt, pepper, and Parmesan cheese into a mixing bowl. Stir until well mixed.
7. Sprinkle the mixture into the prepared pan over the melted butter.
8. Arrange the potato slices into the prepared baking pan.
9. Apply cooking spray over each potato slice, then sprinkle more herb seasoning on top as well.
10. Place the baking pan inside the preheated oven and bake for about 40 minutes or until the potatoes are fork-tender.
11. Remove from the oven and allow the potatoes to rest for a few minutes at room temperature.
12. Serve warm and enjoy!
