The amazing peach flavor of these pies is very refreshing! I can eat them all the time! This recipe is so worth all your time and effort, I’m telling you! In less than an hour, these treats are ready for serving. Enjoy!
Ingredients:
FOR THE PIE CRUST:
2 tsp granulated sugar
1/2 tsp salt
1 c (226g) unsalted butter, cold and cut into 1/2-inch cubes
2 & 1/2 c (300g) all-purpose flour
8 oz. (226g) cream cheese, softened and cut into 1/2-inch cubes
FOR THE FILLING:
1/4 c (50g) brown sugar
A pinch of salt
1 & 1/2 c (255g) chopped peaches
1/2 tsp cinnamon
1/4 tsp almond extract
FOR ASSEMBLY:
1 tbsp water
sanding sugar, optional
1 large Egg
Directions:
For the Pie Crust:
In a food processor, add sugar, cream cheese, salt, flour, and butter. Pulse a few times until the mixture turns into a dough.
Split the dough into two, then shape each into a disc and wrap it with plastic. Place them in the fridge and let them chill for half an hour.
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Line parchment paper onto baking sheets.
Sprinkle flour onto a flat surface, then place the dough on it. Roll it out to about 1/8-inch thick. Slice into circles.
For the Filling:
In a mixing bowl, add brown sugar, peaches, cinnamon, salt, and almond extract. Whisk everything until well incorporated.
Add about 1 1/2 tbsp of the filling over each pie crust and spread it evenly.
To Assemble the Pie:
Fold each pie and use a fork to crimp the sides. Make a tiny slice over each pie.
In a mixing bowl, add water and egg. Whisk until well blended.
Brush each pie with the egg wash and dust with sanding sugar.
Place the pies in the preheated oven and bake for about 20 to 25 minutes or until they turn golden brown. Remove from the oven.
Let the pies sit at room temperature for a few minutes.
Serve warm. Enjoy!
