Ingredients:
2 c all-purpose flour
2 c white sugar
½ tsp baking soda
¼ tsp salt
1 c water
¾ c butter or margarine softened
½ c peanut butter
¼ c vegetable oil
2 Eggs
½ c buttermilk
1 tsp vanilla extract
⅔ c white sugar
⅓ c evaporated milk
1 tbsp butter or margarine
⅓ c chunky peanut butter
⅓ c miniature marshmallows
½ tsp vanilla extract
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray in a 10x15x1-inch jellyroll pan.
3. Add 2 cups of sugar, flour, salt, and baking soda into a large mixing bowl. Whisk until well mixed.
4. Place a saucepan on the stove, then add 3/4 cup of butter and water. Stir until well mixed. Turn the heat to medium and allow the mixture to boil.
5. Remove the pan from the heat, then add 1/2 cup of peanut butter and vegetable oil. Stir until well mixed.
6. Transfer the mixture into the flour mixture, then beat until well mixed.
7. Add the eggs, vanilla, and buttermilk. Beat until well mixed.
8. Transfer everything into the peanut butter mixture, then stir until well mixed.
9. Transfer the batter into the prepared pan and spread it evenly.
10. Place it inside the preheated oven and bake for about 26 minutes or until a toothpick comes out clean after inserting it in the middle.
11. Remove from the oven and allow it to cool.
12. Place a pan on the stove, then add butter, 2/3 cup of sugar, and evaporated milk. Turn the heat to medium, then allow the mixture to boil.
13. Stir and cook for about 2 minutes.
14. Remove the pan from the heat, then add marshmallows, vanilla, and peanut butter. Stir until well mixed. The marshmallows should be melted completely.
