This cobbler is your holiday dream dessert. An incredible dessert that forms its crust and creates an insanely delicious caramel sauce as it bakes! It is also loaded with crunchy pecans, gooey caramel sauce, and it is easier to make than pies. This pecan Pie Cobbler is your number one sweet and buttery fix.
Ingredients
1 Box refrigerated pie crusts, softened as directed on box
2 1/2 cups light corn syrup
2 1/2 cups packed brown sugar
1/2 cup butter, melted
4 1/2 teaspoons vanilla
6 eggs, slightly beaten
2 cups coarsely chopped pecans
Butter-flavor cooking spray
2 cups pecan halves
Vanilla ice cream, if desired
HOW TO MAKE PECAN PIE COBBLER
Step 1: Prepare the oven. Preheat it to 425 degrees F.
Step 2: Grease with shortening or cooking spray a 13 x 9-inch or 3-quart glass baking dish.
Step 3: Unroll 1 pie crust on your work surface. And roll it into a 13 x 9-inch triangle.
Step 4: Transfer the crust into the prepared dish and trim the edges if needed.
Step 5: Stir the corn syrup, brown sugar, butter, vanilla, and eggs in a large bowl. Use a wire whisk to combine the ingredients.
Step 6: Place half of the filling into the crust-lined dish.
Step 7: Now, unroll the second pie crust on your work surface. Roll it into a 13 x 9-inch rectangle and place the crust on top of the filling. You can trim the edges if necessary.
Step 8: Use a butter-flavor cooking spray to spray the crust.
Step 9: Place inside the preheated oven and bake for about 14 to 16 minutes or until browned.
Step 10: After the crust is browned, adjust the temperature to 350 degrees F.
Step 11: Then, slowly spoon the rest of the filling over the baked pastry and sprinkle over the halves pecans.
Step 12: Place it back in the oven and continue baking for another 30 minutes or until set.
Step 13: Once done, remove from the oven and transfer to a cooling rack to cool for 20 minutes.
Step 14: Serve the cobbler warm with vanilla ice cream. Enjoy!
