Our family meals are not complete without this amazing cobbler. You need to give this recipe a try! Just follow these easy steps for they will guide you to perfection. Enjoy!
Ingredients:
2 ½ c light corn syrup
2 c chopped pecans
1 ½ c pecan halves
½ c butter, melted + 1 tablespoon
2 rolled refrigerated pie crusts
6 Eggs, beaten lightly
4 teaspoons vanilla extract
2 ½ c brown sugar
Directions:
1. Prepare the oven and preheat to 218 degrees C or 425 degrees F.
2. Apply cooking spray to the bottom of a baking dish.
3. Unroll a pie crust and shape it into a rectangular, then put it into the prepared baking dish.
4. Add eggs, brown sugar, vanilla extract, melted butter, and corn syrup into a mixing bowl. Beat until well blended.
5. Stir in 2 cups of chopped pecans. Transfer 1/2 of the mixture on top of the prepared pie crust and spread it evenly.
6. Unroll the 2nd pie crust over the pecan mixture layer.
7. Brush the 2nd pie crust with melted butter.
8. Place it inside the preheated oven and bake for 15 minutes or until the top turns golden brown. Remove the pie from the oven.
9. Turn the heat of the oven down to about 350 degrees F.
10. Pour the rest of the pecan mixture on top of the prepared crust and spread it evenly.
11. Sprinkle 1 1/2 cups of chopped pecans over the cobbler.
12. Bake for another 30 minutes or until done.
13. Remove from the oven and allow it to rest for 1 hour at room temperature.
14. Top each serving with vanilla ice cream.
15. Serve and enjoy!
