This will be the best cobbler you will ever have! I am very confident to say it because I am sure everyone is going to love it! Perfect for any occasion, this Peach Pie Cobbler is surely a must-try!
Ingredients:
6 Eggs, beaten lightly
2 ½ c light corn syrup
2 rolled refrigerated pie crusts
4 teaspoons vanilla extract
2 c chopped pecans
2 ½ c brown sugar
1 ½ c pecan halves
½ c butter, melted + 1 tablespoon
Directions:
1. Prepare the oven and preheat to 218 degrees C or 425 degrees F.
2. Apply cooking spray to a baking dish.
3. Unroll a pie crust and turn it into a rectangular shape. Place it into the prepared baking dish.
4. Add eggs, melted butter, vanilla extract, brown sugar, and corn syrup into a mixing bowl. Beat until well incorporated.
5. Add 2 cups of chopped pecans and stir until just mixed. Transfer 1/2 of the mixture on top of the prepared pie crust and spread it evenly.
6. Unroll the second pie crust and place it over the pecan mixture layer.
7. Brush the second pie crust with 1 tbsp of melted butter.
8. Place it inside the preheated oven and bake for about 15 minutes or until the top turns golden brown. Remove the pie from the oven.
9. Turn the heat of the oven down to about 350 degrees F or 175 degrees C.
10. Pour the rest of the pecan mixture on top of the prepared crust.
11. Sprinkle 1 1/2 cups of chopped pecans over the cobbler.
12. Place it inside the oven and bake for 30 more minutes or until done.
13. Remove the cobbler from the oven and allow it to rest for 1 hour at room temperature.
14. Top each serving with vanilla ice cream.
15. Serve warm and enjoy!
