This pecan pie cobbler is a wonderful dessert! A great dessert option for every occasion. Super easy and quick to make. Serve a warm slice of this cobbler with a scoop of vanilla ice cream for a decadent dessert that everyone will love!
Ingredients
6 eggs, beaten lightly
2 rolled refrigerated pie crusts
1 ½ c. pecan halves
2 ½ c. brown sugar
2 ½ c. light corn syrup
4 teaspoons vanilla extract
½ c. butter, melted + 1 tablespoon
2 c. chopped pecans
HOW TO MAKE PECAN PIE COBBLER
Step 1: Prepare the oven. Preheat it to 425 degrees F. Using a non-stick spray, grease the bottom of the dish.
Step 2: Into a rectangular shape, roll out one pie crust and lay it in the prepared dish.
Step 3: Place the brown sugar, melted butter, corn syrup, eggs, and vanilla extract in a large bowl. Mix well until combined. Then, add 2 c. of the chopped pecans. Stir well. Over the pie crust, pour half of the mixture. Then, roll out the second pie crust and put it over the mixture.
Step 4: On the crust, brush 1 tbsp of the melted butter. Place in the preheated oven and bake for about 15 minutes or until golden brown. When done, take the dish out of the oven and adjust the oven temperature to 350 degrees F.
Step 5: Mix the rest of the pecan pie mixture and pour this over the cooked crust. On top, sprinkle 1 1/2 c. of the pecan halves.
Step 6: Return to the oven and resume baking for another 30 minutes. Allow the cobbler to cool for about 1 hour.
Step 7: To serve, top the warm cobbler with a big scoop of vanilla ice cream. Enjoy!
Tips:
Before pouring the pecan mixture over the crust, make sure to stir it well.
To eliminate air pockets, ensure the brown sugar is stored tightly in a dry measuring cup.
Make sure to serve the cobbler out of the oven with a scoop of vanilla ice cream.
