This Penne Alla Vecchia Bettola is an amazing pasta recipe with impressive Oven Roasted Tomato Sauce. The best pink pasta or pasta in vodka sauce you’ll ever make!
3 cloves garlic, crushed
1 yellow onion, medium, chopped
1/4 c. olive oil extra virgin
1 c. vodka
1 tsp dried oregano
12-15 Roma tomatoes (depending on size), diced
1/2 c. Parmesan cheese, shredded
1/2 c. heavy cream
3/4 lb penne pasta
1/4-1/2 tsp chili flakes (adjust according to your preference)
Parsley or fresh oregano to garnish
Salt and freshly ground black pepper
How to make Penne Alla Vecchia Bettola
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Heat the olive oil in an ovenproof skillet. Once hot, add the onions and cook for about 5 minutes until translucent. Next, add the garlic, chili flakes, and oregano. Continue to cook for a minute more. Pour in the vodka and cook for an additional 5 to 7 minutes or until reduced by half.
Step 3: Meanwhile, slice the tomatoes. Then, add them to the pan. Continue to cook for 5 minutes more.
Step 4: Put the lid on and transfer the skillet into the preheated oven. Roast for about 1 1/2 hours.
Step 5: Following the package directions, cook the pasta a minute less than what is written in the box.
Step 6: Take the tomatoes out of the oven when done and transfer them to a blender. Puree the tomatoes. Set aside the extra liquid from the tomatoes. If the sauce gets too thick, add the reserved tomato liquid until you reach your preferred consistency. Strain the sauce using a mesh strainer if the sauce ends up with pieces of seeds/skin.
Step 7: Place the blended sauce in the pan along with the cream. Stir well and cook for about 3 minutes. Next, add the grated cheese. To taste, season with salt and pepper.
Step 8: Toss in the pasta until well coated with the sauce and continue to cook for a minute more.
Step 9: Before serving, garnish with some fresh herbs, extra cheese, and pepper. Enjoy the Penne Alla Vecchia Bettola right away!
