Juicy chicken coated in a simple spice blend and baked to perfection! Pair these delicious baked chicken thighs with a healthy side salad, rice, pasta, or roasted potatoes.
Ingredients
BONE-IN, SKIN-ON THIGHS
8 bone-in, skin-on chicken thighs
BONELESS, SKINLESS THIGHS
Spice blend for both types of chicken thighs
1 teaspoon paprika
8 boneless, skinless chicken thighs
1/2 teaspoon each salt & pepper
1 teaspoon onion powder
1 teaspoon garlic powder
Optional Mediterranean sheet pan meal:
1 tablespoon olive oil
2 Yukon gold potatoes, chopped
1 red onion, chopped
1 tablespoon lemon juice
1 lemon, sliced (optional)
1 red pepper, chopped
2 cloves garlic, minced
1/4 c. feta, crumbled
1/2 c. kalamata olives
1/2 c. parsley, chopped
Salt & pepper to taste
How to Make Perfect Baked Chicken Thighs
BONE-IN, SKIN-ON THIGHS:
Step 1: Prepare the oven. Preheat it to 425 degrees F. In a small bowl, combine the spice blend. After patting the chicken thighs dry, rub them on all sides with the spice blend.
Step 2: Using parchment paper, line a baking sheet. Lay the chicken thighs on the baking sheet, skin facing down.
Step 3: Place in the preheated oven and bake for about 25 to 35 minutes. Flip and broil the chicken thighs for 1 to 2 minutes over high for crispy skin (optional). The chicken is done once its internal temperature reaches 165 degrees F.
FOR BONELESS, SKINLESS THIGHS:
Step 1: Prepare the oven. Preheat it to 425 degrees F. Whisk the spice blend in a small bowl, then coat the chicken with it.
Step 2: On a baking sheet lined with parchment paper, place the chicken thighs, bottom facing down.
Step 3: Place in the preheated oven and bake for about 12 minutes. Flip and continue baking for another 8 minutes until the internal temperature of the chicken reaches 165 degrees F.
IF MAKING SHEET PAN MEAL:
Step 1: Set the oven to 425 degrees F.
Step 2: On a parchment-lined baking sheet, toss the potatoes, red pepper, and red onion with olive oil, and lemon juice. Then, season with salt and pepper. After coating the chicken thighs with the spice blend, lay the chicken thighs on the baking sheet.
Step 3: Toss in the lemon slices. Place in the preheated oven and bake for about 35 to 38 minutes (for skin-on, bone-in thighs) or 25 minutes (if using boneless, skinless thighs).
Step 4: Take the chicken out of the oven. Into the veggies, toss the garlic. Serve garnished with kalamata olives, parsley, and feta. Enjoy!
