Philly Cheesesteak Quesadilla is my ultimate favorite! It is filled with beef and melty cheese sandwiched in a soft tortilla and toasted in a skillet until golden and crisp. If you are a fan of hearty lunches or easy dinners, then this delicious Philly Cheesesteak Quesadilla is a must-try and another amazing addition to your favorite list!
Ingredients
½ medium onion, chopped
½ pound beef, (rib eye or top round), thinly sliced or diced
2 flour tortillas, medium/ burrito-sized
1 tablespoon light olive oil, divided
½ red pepper, diced
½ green pepper, diced
3 slices provolone cheese, sliced in half
6 ounces mushrooms, diced
1 garlic clove, minced
2 teaspoons mayo, optional
¼ teaspoon sea salt, or to taste
⅛ teaspoon ground black pepper, or to taste
How to make Philly Cheesesteak Quesadilla
Step 1: In a large skillet, heat 2 tsp of oil. Add the chopped meat once the oil is hot and season with salt and pepper. Let it cook until the meat is tender and cooked through. Set aside when done and tent to keep the cooked chopped meat warm.
Step 2: In the now-empty skillet, add the finely chopped onion, diced mushrooms, and peppers. Saute until tender. If needed, add 1 tsp of oil. Return the beef to the skillet and add the minced garlic. Stir well and continue to cook until the meat is reheated.
Step 3: On the tortillas, spread the mayo. Between each tortilla, evenly divide the filling, placing them on one side of each tortilla. On top, place the sliced cheese, then close the tortilla.
Step 4: Heat a skillet over medium heat. Drizzle a bit of oil into the skillet for crisper tortillas. Into the hot pan, lay a tortilla and cook until the cheese has melted and the tortilla is crisp and golden, flipping once.
Step 5: Slice the quesadillas and serve them immediately. Enjoy!
