Ingredients:
Chicken Meatballs
2 garlic cloves
1 tsp fresh ginger
3 tbsp milk
1 pound ground chicken
2 tbsp reduced-sodium soy sauce
2 tbsp sliced green onions
1/4 c crushed pineapple drained (reserve the juice)
¼ tsp pepper
1/4 c panko breadcrumbs
Pineapple Teriyaki Sauce
1/4 c reserved pineapple juice
½ tsp fresh ginger
2 garlic cloves
1/2 c reduced-sodium soy sauce
1/3 c water
1/4 c brown sugar
1 tbsp water
1 tbsp cornstarch
Directions:
1. Prepare the oven and preheat to 250 degrees C or 500 degrees F.
2. Apply cooking spray in a 9×13-inch baking dish.
3. Add all the ingredients for the meatballs into a large bowl. Use your clean hands to mix everything until well blended.
4. Shape small meatballs out of the meat mixture.
5. Arrange the meatballs into the prepared baking dish. Make sure to leave a small space between each meatball.
6. Place the baking dish inside the preheated oven and bake the meatballs for about 15 minutes or until done.
7. Place a large skillet on the stove and turn the heat to medium.
8. Add pineapple juice, ginger, water, brown sugar, and soy sauce. Stir until well blended. Allow the sugar to dissolve completely.
9. Add the slurry (cornstarch and water mixture). Stir until well blended. Simmer the sauce for 5 minutes or until the texture becomes thick.
10. Remove the meatballs from the oven, then transfer them into the skillet with the teriyaki sauce. Toss until well coated.
11. Simmer everything for a few more minutes.
12. Remove from the stove. Sprinkle your preferred herbs on top to garnish.
13. Serve over rice and enjoy!
