I will never get tired of recommending this recipe because it is way too perfect just to keep to myself. This Pistachio Pudding Cake is loaded with amazing flavors. Dessert is ready in just one hour. Enjoy!
Ingredients:
4 large Eggs
1 c of club soda
1/2 c canola oil
1 package yellow cake mix (regular size)
1 package (3.4 oz) of instant pistachio pudding mix
1/2 c chopped walnuts
Icing:
3/4 c cold 2% milk
1/2 c chopped walnuts
1 package (3.4 oz) of instant pistachio pudding mix
1 c cold heavy whipping cream
2 tsp confectioners’ sugar
Directions:
1. Apply cooking spray to a 10-inch fluted tube pan.
2. Add the soda, eggs, pudding mix, cake mix, and oil into the bowl of a stand mixer. Beat for about 2 minutes on low speed until well incorporated.
3. Add the walnuts, then stir until just mixed.
4. Transfer the batter to the prepared pan and spread it evenly.
5. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
6. Place the pan with the batter inside the preheated oven and bake for about 40 to 45 minutes or until a toothpick comes out clean after inserting it in the middle.
7. Remove the cake from the oven and allow it to cool for about 10 minutes at room temperature.
8. Add milk, confectioners’ sugar, pudding mix, and cream into a large mixing bowl. Beat until the mixture forms stiff peaks.
9. Pour the frosting over the cake and spread it evenly. Sprinkle walnuts over the cake.
10. Place the cake inside the fridge to chill until ready to serve.
11. Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge.
Make sure that the whipping cream is cold.
