Ingredients:
1/4 lb. beef stew meat
3 tsp olive oil, divided
1/3 lb. boneless centre-cut pork chop (extra fat removed)
2 large cloves of garlic, minced
2 c chopped onion
1/4 lb. sliced cremini mushrooms (2 c)
1/4 c tomato paste
3 c chicken stock (I use Swanson unsalted cooking stock)
2 lbs. drained sauerkraut (reserve the juice)
3 oz. kielbasa, sliced
4 c shredded cabbage
1 c (reserved) sauerkraut juice
8 whole allspice berries
1 tsp dried marjoram leaves
2 bay leaves
Directions:
1. Place a pot on the stove and turn the heat to medium-high.
2. Add 2 tsp of oil and allow it to become hot.
3. Add the pork and beef, then cook for about 5 minutes or until they turn brown.
4. Season the meat with salt and pepper.
5. Remove the meat from the pot onto a clean plate.
6. Add another tsp of oil into the same pot and allow it to become hot.
7. Add the garlic and onions, then sauté for about 2 minutes or until they turn a bit toasted.
8. Add the mushrooms, then sauté and cook for about 2 minutes.
9. Add the cabbage and cook until wilted.
10. Add the tomato paste and stir until well blended.
11. Add the rest of the ingredients and stir until well combined.
12. Cover the pot and simmer everything for about 2 hours or until the meat is fork-tender.
13. Remove the meat from the pot and use two forks to shred them into small pieces.
14. Put the shredded meat back into the pot and stir until well mixed.
15. Serve and enjoy!
