Ingredients:
1 ½ tablespoon olive oil
1 ½ pound potatoes
½ tablespoon taco seasoning
½ tablespoon oregano
½ teaspoon salt
⅓ teaspoon pepper
For Green Beans
½ tablespoon olive oil
4 garlic cloves, minced
¼ teaspoon salt
1-pound green beans
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Slice the peeled potatoes into medium pieces.
3. Add the potato slices into a large mixing bowl, then drizzle olive oil on top.
4. Sprinkle oregano, salt, pepper, and taco seasoning. Toss everything until the potatoes are well coated.
5. Empty the bowl with potatoes onto a large baking sheet and spread it evenly.
6. Place the baking sheet inside the preheated oven and bake the potatoes until fork-tender.
7. In the same bowl of the potatoes, add the green beans, garlic, olive oil, and salt. Toss until well combined.
8. Remove the baking sheet from the oven, then lay the green beans. Toss everything until well combined.
9. Put the baking sheet back into the oven and bake for 30 minutes more or until done.
10. Remove from the oven and allow them to cool for a few minutes at room temperature.
11. Serve warm and enjoy!
