These oven-roasted potatoes and green beans are a delicious side dish packed with garlic and flavorful seasonings. A healthy and tasty side dish that you can easily prepare with minimal work and ready in minutes. A convenient side that you can make in advance. Simply keep this warm in the oven while prepping your other dishes. Or throw them together the day before and store them in the fridge. Reheat before serving.

1 ½ tablespoons olive oil
½ tablespoon taco seasoning
1 ½ pounds potatoes
½ tablespoon oregano
½ teaspoon salt
⅓ teaspoon pepper
½ tablespoon olive oil
1 pound green beans
¼ teaspoon salt
4 garlic cloves, minced
How to make Potatoes and Green Beans
Step 1: After peeling the potatoes, slice them into medium-sized cubes. Into a mixing bowl, place the cubes along with the olive oil, taco seasoning, oregano, salt, and pepper. Toss well.
Step 2: To a large baking sheet, transfer the potatoes, evenly spreading them out so the cubes are not touching.
Step 3: Place in the oven and bake for about 15 minutes at 400 degrees F.
Step 4: In the meantime, place the green beans in the same mixing bowl. Washing the mixing bowl is not needed. Then, add the olive oil, garlic, and salt. Toss well.
Step 5: Take the potatoes out of the oven and add the green beans. Gently toss. Place the baking sheet back into the oven and resume baking for additional 20 to 30 minutes or until the beans and potatoes are completely cooked.
To store: Place the completely cooled potatoes and green beans in an airtight container and store them in the fridge for up to 3 to 5 days.
To reheat: When ready to serve, place the potatoes and green beans on a baking sheet and reheat for a couple of minutes in the oven at 350 degrees. Or in the microwave, until heated through.
