This pressure cooker chicken and rice is a complete meal made in one pot. This is incredibly easy to throw together and ready in under twelve minutes.
This easy recipe guarantees a filling meal with tender and juicy chicken, perfectly cooked rice, and veggies. Before serving, stir in the cheese until melted, or serve the chicken and rice top with cheese. This pressure cooker chicken and rice is seriously good, you’ll be obsessed!
Ingredients
2 tablespoon olive oil
1 pound chicken boneless, skinless breasts or thighs, cut into cubes
1/2 onions, diced
1 can cream of chicken soup
1 cup mixed vegetables, frozen
1 teaspoon garlic salt
2 cups chicken broth – or could use water
1/2 cup cheese, cheddar, shredded
1 cup white rice, not instant – I use long-grain white rice
pinch pepper
How to make Pressure Cooker Chicken and Rice
Step 1: Into the Instant Pot, drizzle some olive oil. Add the cubed pieces of chicken and diced onions. Set the Instant Pot to “Saute” and cook the chicken until the outside is cooked. Then, turn off the Instant Pot.
Step 2: On top of the ingredients in the Instant Pot, sprinkle the seasonings. Then, add the cream of chicken soup along with the frozen vegetables, and broth. Stir well to smooth out the clumps of the cream chicken.
Step 3: Add the rice on top, but DO NOT STIR.
Step 4: Replace the lid and seal the valve. Set to manual for 9 minutes (high pressure). If you prefer the rice softer, you can set it to cook for 10 minutes.
Step 5: When done, allow to naturally release the pressure for 3 minutes, then let out the remaining steam before carefully lifting the lid.
Step 6: Stir in the cheese until melted. Alternatively, you can serve the chicken and rice topped with cheese. Enjoy!
