Layer after layer of amazing flavors, Pumpkin Crunch Cake is my ultimate comfort food! It is a combination of simple ingredients. Serve this cake with salted caramel, ice cream, or pecans, and you have yourself a dessert to remember. Enjoy!
Ingredients:
For the crumb topping:
3/4 c salted butter, softened
1 tsp ground cinnamon
1/2 c light brown sugar
15 oz. yellow cake mix, 1 box
For the filling:
2 large Eggs
15 oz. pure pumpkin, 1 can
1 tbsp pumpkin pie spice
1 tsp vanilla extract
5 oz. evaporated milk, 1 can (about 2/3 c)
1 c granulated sugar
Cake Toppings:
ice cream or caramel sauce, if desired
1/2 c chopped pecans if desired
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Brush a 9×13-inch baking pan with butter.
3. Add cinnamon, brown sugar, cake mix, and butter into a mixing bowl. Stir everything until well blended.
4. Add 1/2 of the crumb mixture into the prepared pan and spread it evenly.
5. In a mixing bowl, add vanilla, pumpkin spice, sugar, evaporated milk, pumpkin, and eggs. Stir until well incorporated. Pour the mixture on top of the crumb mixture layer and spread it evenly.
6. Scatter the rest of the crumb mixture on top of the pumpkin mixture layer.
7. Place the pan in the preheated oven and bake for about 55 minutes or until a toothpick comes out clean after inserting it in the middle.
8. Remove from the oven and allow it to cool completely at room temperature.
9. Serve with caramel sauce, ice cream, or whipped cream on top. Enjoy!
Notes:
Feel free to add chopped walnuts if you like.
Place any leftovers in an airtight container, then place them in the fridge.
