2 c flour
1/3 c sugar
5 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1 1/2 c milk
1/2 c oil
1 tsp vanilla
1 c pumpkin puree
whipped cream, pecans, and maple syrup, for topping
Step 1: Add the baking powder, flour, sugar, cinnamon, nutmeg, cloves, and salt into a large mixing bowl. Whisk until well combined.
Step 2: In another mixing bowl, add the eggs, milk, pumpkin, vanilla, and oil. Whisk until well combined.
Step 3: Transfer the wet ingredients into the dry ingredients and whisk until well combined. Let it sit at room temperature to cool for about 10 minutes.
Step 4: Place a large skillet on the stove and turn the heat to medium heat.
Step 5: Add 1/4 cup of the batter into the hot skillet and cook for 3 minutes or until done.
Step 6: Turn the pancake and cook the other side for another 3 minutes.
Step 7: Place the pancakes on a serving plate and top them with pecans, whipped cream, and maple syrup.
Step 8: Serve and enjoy!
