Come home to a mouthwatering dinner with this Ranch Crockpot Beef Stew. Incredibly easy to make and cook in the crockpot for up to 9 hours until the meat is melt-in-your-mouth tender and the saucy, savory sauce has thickened perfectly.
No, this is not your classic beef stew recipe, but it’s delicious on its own. All the ingredients needed to make this savory dish are simple, and you might already have them on hand. Toss them in the crockpot along with the browned meat and set to cook. Serve this up with bread to scoop up all the delicious sauce!
INGREDIENTS
1-2 tbsp oil
2 lbs beef stew meat
1/3 c. flour
4 medium potatoes, washed and cubed (peel if desired)
3 c. carrots, baby carrots or diced carrots, either way
2 tsp garlic, minced
1 can dice tomatoes
2 tbsp ranch seasoning
3 c. beef broth
1 c. celery, diced (optional)
How to make Ranch Crockpot Beef Stew
Step 1: In a ziplock bag, place the meat and flour. Seal the bag and shake well to coat the meat.
Step 2: In a skillet, heat the oil over medium-high heat. Once hot, add the coated meat and garlic. Cook until all sides of the meat are browned.
Step 3: In the meantime, prepare the veggies. Peel the carrots (optional, but recommended). Chop and add them to the slow cooker.
Step 4: Whisk 1 c. of the broth with the remaining flour until well blended. Then, pour this on top of the meat in the skillet. Cook and stir every couple of minutes until thickened. This takes about 5 minutes.
Step 5: Transfer the contents of the skillet into the crockpot once the meat mixture has thickened.
Step 6: Toss the rest of the ingredients into the crockpot.
Step 7: Put the lid on and set it to cook for 6 to 8 hours on low.
