1 1/2 c part-skim low moisture shredded mozzarella cheese
2 ounces full-fat cream cheese
1 1/3 c super-fine almond flour*
2 tablespoons coconut flour
1 1/2 tablespoons aluminium-free baking powder
1 teaspoon garlic powder
1/4 teaspoon onion powder
3 large Eggs one egg is reserved for egg wash
GARLIC BUTTER TOPPING
2 cloves garlic minced
1 tablespoon butter
1 tablespoon olive oil
1 1/2 tablespoons grated parmesan cheese
1 teaspoon parsley finely chopped
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Line with parchment paper a baking sheet.
Step 3: Add the coconut flour, almond flour, garlic powder, baking powder, and onion powder into a small mixing bowl. Whisk until well combined.
Step 4: In a microwavable bowl, add cream cheese and mozzarella cheese. Place it inside the microwave and heat it until melted. Stir until well mixed, then allow it to cool completely.
Step 5: In a food processor, add 2 eggs, flour mixture, and cheese. Pulse until well mixed.
Step 6: Transfer the dough to a large plastic wrap. Cover and knead the dough until it forms into a ball.
Step 7: Line with plastic wrap on a pastry board.
Step 8: Lay the dough onto the lined pastry board and divide it into 8 even cuts.
Step 9: Roll each cut into sticks.
Step 10: Whisk the last egg, then brush each roll with it.
Step 11: Place the sticks inside the preheated oven and bake until done.
Step 12: Meanwhile, place a saucepan on the stove and turn the heat to medium.
Step 13: Add butter and oil, then allow them to melt and become hot.
Step 14: Add the garlic and sauté until slightly toasted.
Step 15: Remove the breadsticks from the oven and brush each with the garlic butter.
Step 16: Sprinkle a generous amount of Parmesan cheese on top.
Step 17: Put them back inside the oven and bake for 3 more minutes or until the cheese has melted completely.
Step 18: Serve warm with marinara sauce. Enjoy!
