The incredible flavours infused in these carrots are so good! Every bite is just too perfect that you would want to eat the whole thing! My only advice to you is to be very generous with the amount of cheese that you are going to add. Just do it and thank me later! Ingredients:
4 cloves garlic, minced
1/4 c chopped fresh parsley
1 tsp Italian Seasoning
2 lbs. carrots, washed, scrubbed, diagonally cut into about 3-inch pieces
1/3 c grated parmesan cheese
4 tbsp butter
1/4 tsp salt
1/4 tsp fresh ground pepper
Directions:
1. Prepare the oven and preheat to 218 degrees C or 425 degrees F.
2. Apply cooking spray onto a rimmed baking sheet.
3. Add the carrots into a large bowl.
4. Add butter into a heat-proof bowl, then place it inside the microwave. Heat for about a minute until the butter has melted completely.
5. Remove the melted butter from the oven, then add Italian seasoning, minced garlic, pepper, and salt. Stir until well blended.
6. Pour the melted butter mixture on top of the carrots, then toss until well coated.
7. Add the grated Parmesan cheese and stir until the carrots are well coated as well.
8. Arrange the carrot onto the prepared baking sheet.
9. Place it inside the preheated oven and bake the carrots for about 25 minutes or until done.
10. Remove the carrots from the oven, then add more seasonings if needed. Make sure to taste first before adding anything.
11. Garnish with freshly chopped parsley.
12. Serve and enjoy!
