These roasted green beans and potatoes are an amazing addition to your meal. It’s the perfect side dish that pairs beautifully with just about anything. I love this with turkey, beef, and chicken. For a filling meal, this is great over a bed of rice. These delicious roasted green beans and potatoes can also be enjoyed on their own. This has addictive flavors that even your kids that are not big fans of veggies will love!
INGREDIENTS
Potatoes:
2 tablespoons olive oil
1 ½ pounds potatoes
½ tablespoon paprika
½ tablespoon dried Italian herbs
⅓ teaspoon salt or to taste
½ teaspoon pepper
Beans:
3 garlic cloves, minced
½ tablespoon olive oil
¼ teaspoon salt or to taste
1 pound green beans, trimmed and cut in half
How to make Roasted Green Beans and Potatoes
Step 1: Peel, then slice the potatoes into cubes. In a medium mixing bowl, place the potatoes, along with the olive oil, salt, pepper, paprika, and Italian herbs. Toss to coat the potatoes in the mixture.
Step 2: Onto a baking sheet, evenly spread out the potatoes. Bake them in the oven at 400 degrees F for about 15 minutes.
Step 3: In the meantime, add the green beans to the same mixing bowl (no need to wash the bowl). Then, add the olive oil, garlic, and salt. Toss well to coat the beans.
Step 4: Remove the potatoes from the oven and add the green beans on top, evenly spreading them out. Return the pan to the oven and resume baking for additional 25 minutes.
NOTES:
In a storage container with an airtight lid, keep the roasted green beans and potatoes and store them in the fridge for up to 3 to 5 days.
To reheat, transfer the potatoes and green beans to a pan and drizzle with a bit of oil. Reheat on the stove, stirring a few times until warmed through.
