Seared chicken breasts clothed in a simple garlic and herb sauce, then baked to golden brown perfection! This rosemary chicken is another one of my favorite easy dinners to make, especially during busy weeknights. Seriously good I am sure everyone will rave about this scrumptious dinner!
I love this easy recipe. It’s not only delicious, but it’s very versatile. If desired, you can throw in about 1 to 2 cups of veggies to the baking dish, like zucchini, green beans, mushrooms, or cheesy tomatoes. You can even sprinkle the finished chicken with Parmesan or Feta. For extra flavor, sliced kalamata olives, pine nuts, and sun-dried tomatoes can also be added to the sauce.
INGREDIENTS
3 tbsp butter, melted
1 1/4 lbs boneless, skinless chicken breasts
1 tbsp olive oil
2 tsp fresh rosemary leaves, minced
1 1/4 tsp minced garlic
2 tbsp lemon juice
lemon slices and rosemary sprigs for serving – optional
cooking spray
1/4 c. chicken broth
1 tbsp chopped fresh parsley
salt and pepper to taste
How to make Rosemary Chicken
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Generously season all sides of the chicken breasts with salt and pepper.
Step 3: In a large pan, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 3 to 5 minutes per side or until browned.
Step 4: To a baking dish greased with cooking spray, transfer the chicken.
Step 5: Place the rosemary, butter, garlic, chicken broth, and lemon juice in a small bowl. Mix well until blended, then pour this over the chicken.
Step 6: Place in the preheated oven and bake for about 25 minutes or until the chicken is completely cooked. Note that the baking time varies depending on the thickness of the chicken breasts. You’d know the chicken is done once its internal temperature reaches 165 degrees F.
Step 7: Over the chicken, spoon the sauce and sprinkle with some parsley.
Step 8: serve the rosemary chicken right away garnished with some lemon slices and rosemary sprigs (optional). Enjoy!
