The taste of salmon combined with cheese, pasta, spinach, and a lot more ingredients, is what you just might need today! A very simple recipe you can try that you and your loved ones are going to love! Serve this with toasted-garlic bread, and you have yourself a meal to remember. Enjoy!
Ingredients:
8 ounces uncooked pasta I use campanelle
2 tablespoons parsley, chopped
3 tablespoons butter
6 ounces of baby spinach
1 c heavy cream
salt and pepper to taste
2 garlic cloves, minced
1 pound salmon skinless and boneless – one piece or multiple pieces
1 c Parmesan cheese, grated
1 medium onion, chopped
Directions:
1. Put a large pot with water on the stove and turn the heat to high. Allow the water to boil.
2. Add the pasta and a bit of salt, then cook according to the time provided on the package until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
3. Put a pan on the stove and turn the heat to medium.
4. Add butter and allow it to melt.
5. Add onion, then saute for about 4 minutes or until translucent.
6. Add the salmon, then cook for about 5 minutes or until flaky.
7. Add spinach, then cook for about 2 minutes or until wilted completely.
8. Add salt, pepper, heavy cream, garlic, and Parmesan cheese. Stir until well blended. Bring the mixture to a boil.
9. Add the drained and cooked pasta, then toss until well coated by the delicious sauce. Remove from the heat.
10. Sprinkle Parmesan cheese and freshly chopped parsley over each serving.
11. Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge.
