Easy and delicious pasta recipe that you can make in less than thirty minutes. This is packed with chunks of tender salmon, spinach, and pasta in a tasty creamy Parmesan sauce.
This Salmon Pasta with Spinach recipe is super versatile. You can use any type of pasta. I suggest medium cuts like penne, farfalle, radiatore, cavatappi, or rigatoni. If desired, you can substitute half-and-half or full-fat coconut milk instead of heavy cream. In Step 1 when cooking the onions, you can add a splash of dry white wine.
INGREDIENTS
2 garlic cloves, minced
1 pound salmon skinless and boneless – one piece or multiple pieces
8 ounces uncooked pasta – I use campanelle
1 medium onion, chopped
1 c. heavy cream
1 c. Parmesan cheese, grated
3 tablespoons butter
2 tablespoons parsley, chopped
½ teaspoon salt or to taste
¼ teaspoon pepper or to taste
6 ounces of baby spinach
How to make Salmon Pasta with Spinach
Step 1: According to the package directions, cook the pasta.
Step 2: In the meantime, saute the onion for about 4 to 5 minutes in butter on medium heat. Then, add the salmon and continue to cook for 5 to 7 minutes more, breaking the salmon into flakes as it cooks.
Step 3: Toss in the spinach and cook for additional 1 to 2 minutes until wilted.
Step 4: Next, add the heavy cream along with the Parmesan. To taste, season with salt and pepper. Stir well and bring the mixture to a gentle simmer.
Step 5: Add the cooked pasta and chopped parsley. Mix well.
Step 6: Before serving, garnish the salmon pasta with spinach, some parsley, and grated Parmesan. Enjoy!
NOTE:
To store and reheat:
Store this in the fridge for up to 3 to 4 days. But, I would suggest eating this right away. Before eating, reheat on the stove on low heat. If needed, add a splash of water.
