Ingredients:
Biscuits:
1 stick unsalted butter, cubed
1 c shredded cheddar cheese, divided
1 tsp kosher salt
1 tbsp chives, minced
1 tbsp baking powder
3/4 c buttermilk
2 c all-purpose flour
Sausage, Egg, Cheese Filling:
6 Eggs, scrambled
1 c shredded cheddar cheese, divided
8 breakfast sausage patties, fully cooked
Directions:
Prepare the oven and preheat it to 175 degrees C or 350 degrees F.
Line with parchment paper onto a baking sheet.
Add flour, salt, and baking powder to a food processor. Pulse until well incorporated.
Add chives, cheddar cheese, and butter. Pulse again until well combined. Lastly, add buttermilk and pulse until well incorporated.
Sprinkle flour onto a flat surface, then place the dough on it. Knead a few times and roll it into a 1/2-inch-thick piece. Slice it into round shapes.
Top each dough with cheese, a sausage patty, and 2 tbsp of scrambled eggs. Place another dough on top and seal the sides by pressing the dough. Repeat the process with the rest of the ingredients.
Put biscuit rolls onto the prepared baking sheet.
Place the baking sheet in the preheated oven and bake the biscuits for about 20 minutes or until they turn golden brown.
Remove the biscuits from the oven and let them sit at room temperature for a few minutes.

Notes:
Place any leftovers in an airtight container, then put them in the fridge. They can last up to one week.
