Perfectly crunchy, sweet, creamy, and savory – this sesame chicken salad is one of the best salads you’ll ever make! Super easy to make and perfect for the company. This salad is tossed in a delightful sesame vinaigrette made with simple ingredients.
This salad recipe is not only easy and quick to make, but also easily customizable. If desired, you can use different proteins such as steak, salmon, shrimp, pork, or even tofu. You can also use other greens, such as chopped Romaine. Cashews or peanuts are an amazing substitute for almonds. And my favorite is tossing in some fruit or crunchy noodles, or wonton strips. If you want to make this vegetarian, just use crispy baked tofu or other plant-based proteins instead of chicken. In a gluten-free diet? Use gluten-free tamari in place of soy sauce.
INGREDIENTS
SALAD:
2 c. diced or shredded cooked chicken
1 (14-oz.) bag coleslaw (or 7 c. shredded cabbage)
1 c. loosely-packed chopped cilantro
2/3 c. sliced or slivered almonds, toasted
2/3 c. sliced green onions
toasted sesame seeds, for sprinkling
1/2 c. shredded carrots
1 avocado, peeled, pitted, and diced
SESAME VINAIGRETTE:
1 tbsp maple syrup or honey
1/2 tsp ground ginger
1 tsp toasted sesame oil
1 small garlic clove, pressed or minced (or 1/4 tsp garlic powder)
2 tbsp avocado oil (or olive oil)
a few twists of freshly-cracked black pepper
2 tbsp rice vinegar
1 tbsp low-sodium soy sauce (or tamari)
HOW TO MAKE SESAME CHICKEN SALAD
Step 1: For the vinaigrette, combine the vinaigrette ingredients in a small bowl. You can also place the ingredients in a mason jar and shake to mix.
Step 2: In a large mixing bowl, place the coleslaw, chicken, cilantro, green onions, almonds, carrots, and avocado. On top, drizzle the vinaigrette and toss well to coat.
Step 3: Serve the salad right away garnished with sesame seeds. Enjoy!
