Super easy to whip up with tender, juicy chicken, potatoes, and balsamic tomatoes. This sheet pan dinner is an amazing, healthy, delicious weeknight meal!
Ingredients
Potatoes:
1 pound small Yukon gold potatoes, quartered
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
Balsamic Reduction:
1/3 cup balsamic vinegar
2 tablespoons brown sugar
Chicken:
4 boneless, skinless chicken breasts
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
Tomatoes:
1 cup cherry tomatoes, halved
2 teaspoons balsamic vinegar
1 teaspoon olive oil
1/4 teaspoon salt
sliced fresh basil, for serving
fresh mozzarella cheese balls, for serving, optional
How to make Sheet Pan Baked Balsamic Chicken with Potatoes
Step 1: Prepare the oven. Preheat it to 425 degrees F. Using foil, line a large-rimmed baking sheet, then lightly grease with cooking spray. Set aside.
Step 2: In a bowl, place the potatoes. Then, add the oil, salt, and pepper. Toss to coat the potatoes well. To the prepared baking sheet, transfer the potatoes. Place in the oven and roast for about 15 minutes.
Step 3: Meanwhile, bring the balsamic vinegar to a boil in a saucepan over medium heat. Then, whisk in the brown sugar and cook for about 3 minutes until the mixture has thickened a little, stirring constantly. Set aside when done.
Step 4: Using cooking spray, grease the chicken breasts. Then, sprinkle with salt and pepper. Over the potatoes, lay the chicken breasts.
Step 5: Set aside 1 tbsp of the balsamic vinegar and brush half of the remaining balsamic vinegar over the chicken breasts. Place in the oven and bake for about 20 minutes.
Step 6: While the chicken is baking, toss the tomatoes with balsamic vinegar, oil, and salt.
Step 7: Take the baking dish out of the oven and brush the rest of the glaze over the chicken. Around the chicken, add the tomatoes. Continue to bake for another 5 to 8 minutes or until the internal temperature of the chicken reaches 165 degrees F.
Step 8: Drizzle the chicken and tomatoes with the reserved balsamic glaze. Before serving, garnish with some basil. Enjoy the Balsamic Chicken with Potatoes with mozzarella cheese.
