I love this Thai-inspired recipe! Super easy and quick to throw together and packed with bold flavors! Enjoy a bowl of soft noodles tossed in a tasty soy-based sweet and savory sauce with veggies and peanuts. Serve this Simply Thai Noodle Bowl garnished with tons of cilantro and green onions for added flavor and texture.
Ingredients
1/2 c. chopped green onions
1 c. shredded cabbage
1/2 c. chopped cilantro
1/3 c. chopped unsalted peanuts
1/2 c. shredded carrots
1 c. shredded rotisserie chicken optional
5 ounces rice stick noodles (dry)
Sauce:
5-7 cloves minced garlic
1/4 c. soy sauce
1/8 c. sesame oil
1/2–1 teaspoon red pepper flakes
1/8 c. honey
How to make a Simple Thai Noodle Bowl
Step 1: In warm water, soak the rice noodles for about 30 minutes, fully submerging them. Drain the noodles when done.
Step 2: In a pot, bring water to a boil. Once boiling, add the drained noodles and cook for about 2 minutes. Then, take it off the heat and quickly drain.
Step 3: Place the sauce ingredients in a small bowl and mix well until blended. Onto the drained noodles, pour the sauce and toss to coat.
Step 4: To the noodle mixture, add the shredded cabbage, shredded carrots, and shredded cilantro. Next, add half of the chopped cilantro along with the chopped green onions and chopped peanuts. Set aside another half of the garnish. If desired, you can add shredded rotisserie chicken. Mix well until everything is combined.
Step 5: Before serving, garnish the Thai Noodle Bowl with the remaining chopped cilantro, chopped green onions, and chopped peanuts. Enjoy!
Note:
To make chicken at home, cook about 2 to 3 pieces of chicken tenderloins in a crockpot. Pour in the broth. Set to cook for 3 to 4 hours on high. When done, shred the chicken and drain the broth.
