I am obsessed with the Sloppy Joe Casserole. It is packed with juicy ground beef and noodles clothed on a delicious cheesy Manwich sauce with tomatoes and corn. This casserole is one of the best I’ve made. You can also store this in the fridge for up to 4-4 days or even freeze it for up to 3 months.
Ingredients
½ c. onions, diced
1 pound ground beef, 85% lean
1 15.5-ounce can Manwich sauce
¾ lb farfalle pasta, uncooked
1 c. corn, frozen or drained from a can
8 ounces Velveeta cheese, cubed
1 ½ c. cheddar, shredded
2 ½ c. chicken broth
1 14.5-ounce can of diced tomatoes, NOT drained
How to make Sloppy Joe Casserole
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: In a large, high-walled skillet pot, cook the ground beef over medium-high heat for about 2 minutes, breaking the meat into pieces as it cooks. Then, add the onions and continue to cook for additional 5 minutes or until the beef is no longer pink and the onions are tender. Drain the excess grease when done.
Step 3: Into the beef mixture in the skillet, add the Manwich sauce, chicken broth, and undrained diced tomatoes. Bring everything to a gentle boil, then toss in the pasta.
Step 4: Put the lid on and allow everything to boil gently until the pasta is al dente, stirring a couple of times. Adjust the seasoning according to taste.
Step 5: Adjust the heat to low. Add the corn. Stir and add the cubed Velveeta. Replace the lid and let the cheese melt. Then, gently stir until blended.
Step 6: Into a lightly greased 9 x 13-inch casserole dish, pour the mixture and sprinkle the shredded cheddar on top. Tent the casserole dish and place it in the preheated oven. Bake for about 15 minutes.
Step 7: Serve the casserole immediately with cornbread. Enjoy!
Notes:
You can assemble this casserole and sprinkle it with cheese. Tent the casserole and keep it in the fridge for up to 3 days.
When ready to serve, let the casserole sit for about 30 minutes at room temperature. Then, bake for about 25 minutes at 350 degrees.
For this recipe, you can use different types of pasta. Follow the package directions to cook the pasta and adjust as needed. If desired, you can also use a whole pound of pasta.
