Packed with juicy ground beef and noodles. This easy casserole recipe is hard to miss! Everything is smothered in a delightful cheesy Manwich sauce with tomatoes and corn. You will surely find it hard to say no to another plate!
Ingredients
½ c. onions, diced
1 pound ground beef, 85% lean
1 15.5-ounces can of Manwich sauce
1 14.5-ounces can of diced tomatoes – not drained
2 ½ c. chicken broth
¾ lb. farfalle pasta, uncooked
1 ½ c. cheddar, shredded
8 ounces Velveeta cheese, cubed
1 c. corn, frozen or drained from a can
How to make Sloppy Joe Casserole
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: In a large, high-walled skillet pot, cook the ground beef over medium-high heat for about 2 minutes, breaking the meat into chunks as it cooks. Then, toss in the onions and continue to cook for another 5 minutes or until the beef is brown and the onions are tender. When done, drain the grease.
Step 3: Pour in the Manwich sauce and chicken broth. Then, add the undrained diced tomatoes. Bring everything to a gentle boil before stirring in the pasta.
Step 4: Put the lid on and allow it to gently boil until the pasta is al dente. To make sure the pasta doesn’t stick to the bottom of the pot, stir a couple of times.
Step 5: Adjust the heat to low, then stir in the corn. Next, add the cubed Velveeta. Put the lid on and let it melt. Uncover and gently stir until blended.
Step 6: Into a lightly greased 9 x 13-inch casserole dish, transfer the mixture and top with shredded cheddar.
Step 7: Tent and bake in the preheated oven for about 15 minutes.
Step 8: Serve the casserole immediately with cornbread. Enjoy!
Notes:
If making in advance, assemble the casserole as directed and top it with cheese. Tent and place in the fridge for up to 3 days.
Before baking, allow the casserole to sit for 30 minutes at room temperature. Cover the casserole and bake for 25 minutes at 350 degrees.
You are welcome to use a variety of pasta. Simply refer to the box for the exact cooking time.
Feel free to use 1 whole pound of pasta.
