Warm and cozy slow cooker beef stew. This beef stew is packed with mouthwatering flavor that will undoubtedly satisfy your savory cravings!
INGREDIENTS
2 tbsp vegetable oil
1/4 c. all-purpose flour
2 1/2 lbs boneless beef chuck roast, trimmed and cut Into 1-inch cubed
1 1/2 c. to 2 1/2 c. water
2 large beef bouillon cubes
3 tsp Italian seasoning
2 bay leaves
1 (10 3-oz.) can of condensed tomato soup, undiluted
3 medium carrots, cut into 1-inch pieces
2 stalks of celery, cut into 1-inch pieces
2 medium onions, sliced
2 large Russet potatoes, peeled and cut into 1 1/2-inch pieces
8 oz. whole mushrooms, trimmed
3/4 c. frozen peas, thawed
1/2 tsp black pepper
HOW TO MAKE SLOW COOKER BEEF STEW
Step 1: Into a 1-gallon Ziplock, place 1/4 c. of the flour. Then, add the meat in batches. Seal the bag and shake well to evenly coat all the meat pieces.
Step 2: To a large skillet, heat the oil. Once hot, add the meat in batches (to prevent overcrowding the pan) and sear until browned. Once browned, transfer the meat to the crockpot.
Step 3: To the skillet, pour in 1 1/2 c. water and 2 bouillon cubes. Cook while deglazing the pan and dissolving the bouillon cubes. Take the skillet off the heat. Then, add the tomato soup, Italian seasonings, bay leaves, and black pepper. Stir well. Pour this on top of the beef.
Step 4: To the crockpot, add the onions, potatoes, carrots, celery, and mushrooms.
Step 5: Cover the crockpot and set it to cook for 8 hours on low or until the beef and vegetables are tender. Add more water if needed.
Step 6: In the last 20 to 30 minutes of cooking, add the thawed peas.
Step 7: Before serving, discard the bay leaves.
NOTES:
I recommend using a heavy-bottomed skillet for browning the meat as it will distribute heat more evenly.
For even cooking, make sure not to overcrowd the pan when browning the meat.
I suggest adding salt if needed at the end as the Bouillon cubes are pretty salty.
