Slow Cooker Cabbage Roll Soup

Prep Time: 15 mins | Cook Time: 4 hrs | Total Time: 4 hrs 15 mins | Yield: 6 Servings

A twist of the Cabbage Rolls! This soup is just pure awesomeness! Every bite of it will surely make you want to eat a lot. Feel free to add more ingredients if you feel like it. Ingredients:

1 pound ground beef
1 onion, chopped
3 c cabbage, chopped
1 c green beans cut in half
1 c celery, chopped
1/2 bell pepper, chopped
1 796ml can diced tomatoes
1 156ml can tomato paste
1 teaspoon Italian seasoning
3 cloves minced garlic
3/4 900ml broth {vegetable, beef or chicken)
1 c minute rice, uncooked
salt and pepper to taste

Directions:

Step 1: Place a skillet on the stove and turn the heat to medium.

Step 2: Add in 1 tablespoon of oil and allow it to become hot.

Step 3: Add in the ground beef and cook until crumbly and brown. Sprinkle salt and pepper to taste.

Step 4: Place the cooked ground beef in a slow cooker.

Step 5: Add in the veggies, diced tomatoes, tomato paste, and stock into the slow cooker.

Step 6: Add in the spices and cover the slow cooker.

Step 7: Cook for 4 hours on high setting and 8 hours on a low setting.

Step 8: 15 minutes before cooking time ends, add in the rice and cover. Make sure to check after 10 minutes to check the doneness of the rice.

Step 9: Serve and enjoy!
