This Cajun Sausage, Potatoes, And Green Beans is a great dish you can make easily in your slow cooker. A simple one-pot meal packed with Cajun-style andouille sausage, quartered red potatoes, fresh green beans, and sliced mushrooms. For maximum flavor, a buttery broth is drizzled on top.
Ingredients
1 (12 ounces) package Cajun style andouille sausage
1 1/2 lbs. (24 ounces) green beans
1/2 lb. (8 ounces) white mushrooms
1 1/2 lbs. (24 ounces) red potatoes
4 teaspoon Cajun seasoning
1/2 c. chicken broth
4 tablespoons butter
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
How to make Slow Cooker Cajun Sausage, Potatoes, and Green Beans
Step 1: Into the slow cooker, pour in the chicken broth.
Step 2: Into thin quarter-inch slices, cut the sausage. Into 1-inch cubes or chunks, cut the red potatoes. After washing the green beans, trim the ends. Next, quarter the mushrooms. Into the slow cooker, add the sausage, potatoes, green beans, and mushrooms.
Step 3: Over the ingredients in the slow cooker, sprinkle the Cajun seasoning, salt, and pepper. Using a spoon, toss the ingredients. Into 8 pieces, cut the butter and add them into the slow cooker.
Step 4: Cover with the lid and set to cook for 4 hours on low or until the potatoes are tender.
Step 5: Stir and spoon the Cajun Sausage, Potatoes, and Green Beans onto servings plates or bowls. Enjoy right away.
Notes:
You can use kielbasa sausage in place of andouille and season with another seasoning such as Montreal chicken seasoning or lemon pepper seasoning instead of Cajun seasoning.
I do not recommend using canned green beans as they turned out mushy.
Mushrooms are optional. If you do not like mushrooms, just skip them.
In place of red potatoes, you can use yellow potatoes and they cook at the same time as the red ones. If using Russet potatoes, I suggest peeling them as they take a bit longer to cook.
