After a long day, I always would want to come home to a warm, comforting meal. This slow cooker chicken casserole has been one of my go-to and favorite. This is excellent for busy weeknights. Warm and cheesy – this slow cooker chicken casserole is another amazing addition to your menu staple list!
To make this chicken casserole, all you need are just a few simple, readily available ingredients. You can also prep this chicken casserole the night before. Simply add the chicken, onions, cream of chicken soup, and chicken stock to your slow cooker bowl. Cover and keep this in the fridge. The next day, transfer the bowl to the slow cooker and set the chicken casserole to cook. While you are away, allow the slow cooker to do all the work for you. The moment you step into your home, all you need to do is add the remaining ingredients and viola! Dinner is ready! Plus, this chicken casserole freezes and reheats beautifully!
Ingredients
1 medium yellow onion, chopped
4 boneless, skinless chicken breasts
1 can (10.5 oz.) cream of chicken soup
1 c. cooked rice
1 ½ c. chicken stock
2 c. cheddar cheese, shredded
fresh chopped parsley, to garnish
1 can (15 oz.) corn kernels, drained
How to make Slow Cooker Chicken Casserole
Step 1: Place the chicken breasts in the bowl of a slow cooker and top with the onion.
Step 2: Place the soup and stock in a medium bowl. Mix well until combined and pour this on top of the chicken.
Step 3: Set to cook for 8 hours on low.
Step 4: Take the chicken out and shred using two forks. Then, return to the slow cooker. Add the rice along with the cheese and corn. Stir well until incorporated.
Step 5: Before serving, garnish with some parsley. Enjoy!
