Ingredients:
4 boneless skinless chicken breasts
1 medium onion, chopped
1 can 10.5 oz cream of chicken soup
1 1/2 c chicken stock
1 c cooked rice
2 c cheddar cheese, shredded
1 can (15 oz) corn kernels, drained
fresh chopped parsley, to garnish
Directions:
Step 1: Add the chicken breasts into the slow cooker together with the onion.
Step 2: In a mixing bowl, add the stock and soup. Stir until well mixed.
Step 3: Transfer the mixture into the slow cooker over the chicken and onion.
Step 4: Cover the slow cooker and cook for 8 hours on low heat.
Step 5: Remove the chicken breasts from the slow cooker and use two forks to shred them into small pieces.
Step 6: Put the shredded chicken back to the slow cooker.
Step 7: Add the corn, rice, and cheese. Stir until well combined.
Step 8: Spoon the casserole into serving bowls and sprinkle parsley on top of each serving.
Step 9: Serve and enjoy!
