This lemon chicken is an incredible slow cooker meal filled with lemon flavor and loads of scrumptious garlic. This is already a complete meal by itself, with no need for sides. This slow cooker dish has tender and juicy pieces of chicken, potatoes, and veggies cooked all at the same time right in the crockpot.

2 tablespoons olive oil
6-8 chicken thighs – bone-in, skin on
1 red onion
4 cloves garlic
1-1.5 pounds of baby potatoes
2 tablespoons honey
1/2 tablespoon fresh thyme leaves
bunch of thin green asparagus
HOW TO MAKE SLOW-COOKER LEMON CHICKEN
Step 1: After peeling and slicing the red onion, place them in a single layer at the bottom of a slow cooker. On top, add the chicken thighs in one layer.
Step 2: Wash, then slice the baby potatoes in half and add them to the slow cooker.
Step 3: Place the zest of 1 lemon, juice of that same lemon, olive oil, honey, thyme, sea salt, pepper, and finely chopped garlic in a small bowl. Mix well, then pour this on top of the ingredients in the slow cooker.
Step 4: Cover and set to cook for 3 to 4 hours on high or 6 to 8 hours on low.
Step 5: Set the slow cooker to high for about 15 to 20 minutes before the cooking time is up. Then, add the asparagus and replace the lid.
Step 6: On a baking sheet, transfer the chicken thighs and broil for 3 to 5 minutes on high or until the skin is golden.
Step 7: Serve the lemon chicken right away. Enjoy!
