In this recipe, I use 1 stick of butter. Yes, you heard it right! This roast makes amazing gravy so do not be scared about the stick of butter. I love serving this pot roast over mashed potatoes with greens on the side.
This pot roast is ready to serve once done. This Mississippi Pot Roast has been a huge part of my family’s regular menu rotation. My family keeps asking for this over and over again!
Ingredients
½ c. salted butter 1 stick
3 pounds chuck roast
2 tablespoons olive oil
1 packet ranch dressing mix
8 Pepperoncini peppers
1 packet Au Jus mix
salt & pepper to taste
How to make Slow Cooker Mississippi Pot Roast
Step 1: Into a hot large non-stick pan over high heat, add the oil.
Step 2: Pat all sides of the pot roast using a paper towel, then season with a bit of pepper.
Step 3: Add the roast to the skillet and sear for about 2 to 3 minutes until golden brown. Flip the roast using tongs and sear the other side for 2 to 3 minutes more.
Step 4: To the slow cooker, transfer the meat and sprinkle with packets of dry ranch dressing and Au Jus. On top, place a stick of butter. Around the roast, place the peppers.
Step 5: Cover with the lid and set to cook for 8 hours on low.
Step 6: Then, shred the meat using two forks and discard any big fatty pieces.
Step 7: Serve the Mississippi Pot Roast right away over rice or mashed potatoes. Enjoy!
