I am obsessed with this smoked queso dip! Creamy, mouthwatering smoked cheese dip best paired with tortilla chips. This dip is the best dip for a holiday bash, game day, camping, or movie night.
This smoked queso dip is packed with breakfast sausage, Velveeta cheese, jalapenos, diced tomatoes and green chiles, Mexican cheese blend, and infused with a smoky flavor. And I love that this dip is highly customizable. You are welcome to adjust according to your liking.
I will always look for an excuse to make this dip. This is crazy good, incredibly easy and quick to make, and super versatile. This smoked queso dip is by far my number one favorite dip!
Ingredients
2 pounds of breakfast sausage, cooked and crumbled
2 pounds Velveeta cheese, cubed
1 (8-ounce) bag of shredded Mexican cheese blend
1 c. pickled jalapeño slices
2 tablespoons minced garlic
2 (10 ounces) cans of diced tomatoes and green chiles, undrained
3 c. hickory wood chips – soaked for 30 minutes
2 tablespoons minced onion flakes
½ c. milk or beer
HOW TO MAKE SMOKED QUESO DIP
Step 1: In a 9 x 13-inch disposable aluminum pan, place all the ingredients except for the wood chips.
Step 2: In a charcoal starter, place some charcoal and light. Dump into the grill once the coals begin to turn gray, putting the coals to one side. Place some wood chips on top of the hot coal. On the side of the grill without the coals, place the pan with the dip. Then, close the grill.
Step 3: Cook the queso for about 30 to 45 minutes or up to a few hours, stirring often and adding more wood chips on top of the coals every 20 minutes.
Step 4: To the queso, add the milk or beer until you reach your preferred consistency.
Step 5: Serve the dip immediately with veggie slices or chips. Enjoy!
