Ingredients:
2 large russet potatoes, cut into 1-inch cubes
14 oz smoked sausage, sliced thin
1 small onion, chopped
1/2 c chopped bell pepper, green or red
1 clove garlic, minced
1/4 chicken stock
1 1/2 tsp paprika
1/4 tsp salt and pepper
1/4 tsp dried parsley
2 tsp vegetable oil
Directions:
1. Heat oil in a large skillet over medium heat.
2. Add the sausage, then cook until crumbly and brown.
3. Remove the sausage from the skillet onto a clean plate.
4. In the same skillet, add the potatoes and cook for a few minutes.
5. Add the garlic, onions, and pepper. Saute until soft and fragrant.
6. Add the chicken stock and stir until well mixed.
7. Cover the skillet and simmer for about 5 minutes.
8. Remove the cover, then stir in the spices.
9. Put the sausage back to the skillet and stir until well mixed.
10. Serve immediately and enjoy!
