Smothered pork chops have been my go-to for a last-minute dinner. Pan-seared juicy and extra flavorful pork chops smothered in a delightful rich onion gravy. This is an easy dinner option excellent for any night!
INGREDIENTS
Pork Chops:
2 tbsp olive oil
1 lb bone-in pork chops, 1” thick
2 tbsp unsalted butter
1 tsp poultry seasoning or seasoning salt
1/4 tsp fresh ground pepper
Gravy:
1 large yellow onion, thinly sliced
1 tbsp unsalted butter
3 cloves garlic, minced
1/2 c. low sodium chicken broth
1/2 tbsp chopped fresh thyme
1/4 c. heavy cream
chopped fresh parsley for garnish
pinch of salt
How to make Smothered Pork Chops
Step 1: Sprinkle the pork chops with seasoning salt and pepper.
Step 2: In a large skillet, heat the oil and butter over medium-high heat. Once the butter has melted, add the pork chops and sear for about 5 minutes on each side until golden bowl. If needed, cook the batches in batches. When done, transfer the chops to a plate and tent to keep them warm.
Step 3: Place the skillet back on the stove and add 1 tbsp butter. Let the butter melt over medium heat. Once melted, add the sliced onions and season with a pinch of salt. Cook the onions for about 12 minutes or until tender and caramelized, stirring often.
Step 4: To the skillet, add the garlic along with the fresh thyme. Cook for additional 30 seconds. Then, pour in the chicken broth. Scrape the browned bits from the bottom of the pan using a wooden spoon. Next, whisk in the heavy cream and simmer for about a minute.
Step 5: Into the skillet, return the pork chops and the pork juices. Adjust the heat to medium-low and cook for additional 3 minutes or until the pork is completely cooked and the sauce has thickened. When done, take the skillet off the heat and serve the smothered pork chops right away garnished with some parsley. Enjoy!
NOTES:
WW FREESTYLE POINTS: 12
Use half & half instead of heavy cream to reduce the points to 10. You can also use more virgin oil in place of olive oil.
TO STORE THE LEFTOVERS:
In an airtight container, keep the completely cooled pork chops and store them in the fridge for up to 3 to 4 days.
