I love this cake recipe so much! Oh, man, you have got to give this one a try, I’m telling you! Feel free to add more ingredients if you prefer. Enjoy!
Ingredients:
3 and 2/3 c (433g) cake flour* (spoon & leveled)
1 tsp salt
1 tsp baking powder
3/4 tsp baking soda
1 and 1/2 c (345g) unsalted butter, softened to room temperature
1 and 2/3 c (330g) granulated sugar
3 large eggs + 2 additional Egg whites, at room temperature*
1 tbsp pure vanilla extract (yes, Tbsp!)
1 and 1/2 c (360ml) buttermilk, at room temperature*
Cinnamon Swirl
1/2 c (100g) packed light or dark brown sugar
1/3 c all-purpose flour (41g) or cake flour (38g)
1 tbsp ground cinnamon*
1/4 c (4 Tbsp; 60g) unsalted butter, melted
Brown Sugar Cinnamon Buttercream
1 and 1/4 c (2.5 sticks; 290g) unsalted butter, softened to room temperature
8 oz (224g) full-fat block cream cheese, room temperature and sliced into 4 pieces*
3/4 c (150g) packed light or dark brown sugar
1 tbsp ground cinnamon*
5 and 1/2 cups (660g) confectioners’ sugar
1/4 c (60ml) heavy cream or whole milk
1 tsp pure vanilla extract
1/8 tsp salt, plus more as needed
optional for garnish: snickerdoodle cookies
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Line with parchment paper and apply the cooking spray in three 9-inch cake pans.
To Make the Cake:
Step 1: In a mixing bowl, add the baking powder, flour, baking soda, and salt. Whisk until well combined.
Step 2: Mix the butter and sugar with a stand mixer until smooth.
Step 3: Add 3 eggs, vanilla extract, and 2 egg whites. Beat until well mixed.
Step 4: Transfer the dry ingredients into the egg mixture and beat until well blended and thick.
Step 5: Transfer the batter into the prepared cake pans and spread it evenly.
For the Cinnamon Swirl:
Step 1: In a mixing bowl, add flour, brown sugar, and cinnamon. Whisk until well mixed.
Step 2: Add the melted butter and beat until well mixed.
Step 3: Spoon the mixture and drop them into the unbaked cakes. Swirl using a knife on top.
Step 4: Place it inside the preheated oven and bake for about 26 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 5: Remove the cakes from the oven and allow them to cool at room temperature completely.
To Make the Frosting:
Step 1: Mix butter with a stand mixer until creamy.
Step 2: Add the cream cheese and beat until well mixed.
Step 3: Add brown sugar and beat until well mixed.
Step 4: Add the confectioners’ sugar, cinnamon, vanilla extract, heavy cream, and salt. Beat until well mixed.
To Assemble the Cakes:
Step 1: Put a cake on the cake stand, then spread 1 1/2 cups of frosting on top.
Step 2: Repeat the process until all cakes are arranged in layers.
Step 3: Top everything with a crumb coat.
Step 4: Place it inside the fridge to chill for about an hour.
Step 5: Serve and enjoy!
