Hello there, friends! Are you craving pancakes? Then, you have got to try this recipe that I am sharing! A big thanks to my dear friend, Alexis, for this awesome recipe! I am so glad that I gave this a try because I never would have tasted perfection! These pancakes are best served hot with your favourite fruits! Just a short backstory about this recipe. When I was in college, I crashed at Lex’s house after a night of hanging out. I was pretty hungover when I woke up but I was so glad that she cooked this Soufflé! I ate the whole thing and that was the time that this became my favourite! I have been making it since then! Now, I get to share it with you as well! Anyway, enough with the long introduction. Ingredients:
4 Egg whites
2 Egg yolks
1/3 c wheat flour
1 3/4 tsp baking powder
2 3/4 tbsp milk
Splash of vanilla extract
4 tbsp granulated sugar
Lemon juice
Oil, for pan
Directions:
1. In a mixing bowl, add the egg whites and beat until they form stiff peaks.
2. Add the granulated sugar and beat until well blended.
3. In another mixing bowl, add the egg yolks, flour, baking powder, milk, lemon juice, and vanilla extract. Whisk until well combined.
4. Gradually transfer the egg white mixture or meringue into the batter and beat every addition.
5. Place a frying pan on the stove and turn the heat to low.
6. Add oil and allow it to become hot.
7. Add a cup of the batter and cook each side for 6 minutes or until brown. Make sure to cook the batter in batches.
8. Serve immediately with fruits. Enjoy!
