Ingredients:
Dough:
16 oz phyllo dough
1 c olive oil
Filling:
20 oz frozen spinach thawed and drained
1 yellow onion finely diced
12 oz feta
1 bunch parsley minced
1 1/2 cups parmesan cheese grated
1/2 teaspoon kosher salt
3 garlic cloves minced
3 large Eggs
1/4 tsp red pepper flakes
2 tablespoons of olive oil
Directions:
Step 1: Prepare the oven and preheat to 162 degrees C or 325 degrees F.
Step 2: Apply olive oil in a 9×13-inch baking pan.
Step 3: Unroll the phyllo dough, then cover it with a damp towel.
Step 4: Arrange two dough pieces on the bottom of the prepared baking pan, then brush each top with olive oil. Repeat this process to the rest of the dough.
Step 5: In a large mixing bowl, add all the ingredients for the filling. Stir until well combined.
Step 6: Spread the filling over the dough.
Step 7: Top the filling with the remaining dough and brush olive oil on top.
Step 8: Slice the top of the dough with a sharp knife.
Step 9: Place the baking pan inside the preheated oven and bake for about an hour or until golden brown.
Step 10: Remove from the oven and allow it to cool at room temperature for a few minutes.
Step 11: Serve and enjoy!
